Het "domaine" is gesitueerd op de heuvels in Les Loges, het hoogst gelegen deel van Pouilly Fum, dicht tegen Sancerre aan.

Jonathan is de 5e generatie wijnmaker binnen de Pabiot familie. Nadat hij in de Languedoc bij Leon Barral heeft gewerkt is hij op 21-jarige leeftijd teruggekeerd naar het familiedomein. Het "domaine" is gesitueerd op de heuvels in Les Loges, het hoogst gelegen deel van Pouilly Fumé, dicht tegen Sancerre aan. De familie bewekt wijngaarden van drie verschillende bodems: Kimmeridgian Mergel (Marnes Kimméridgiennes), Portlandische Kalksteen (Calcaire Portlandien) en Silice-Argilo Silex (vuursteen). Jonathan maakt slechts 12.000 flessen per jaar.

  • Druivensoort(en): 100% Sauvignon Blanc
  • In de wijngaard: Bio sinds 2006, BD sinds 2016. Uitzonderlijk hoge plantdichtheid (10.000 stokken per ha). Leeftijd van de stokken is tussen de 10 en 50 jaar oud. Voor deze wijn worden druiven gebruikt die komen uit wijngaarden van alle drie de verschillende ondergronden, allen met een zuid/zuidwest expositie. Handmatige oogst.
  • In de kelder: Langzame fermentatie bij lage temperatuur dmv wijngaard-eigen gisten. Rijping van 12 tot 18 maanden op de "lie" in roestvrij staal en beton. Geen filtering, geen klaring. Minimale hoeveelheid sulfiet.
