De tweede gisting komt van natuurlijke restsuikers. Er worden geen extra suikers, gist of liqueur dexpdition toegevoegd. Minstens 24 maanden

Wijngaarden liggen 60m boven zeeniveau, goede natuurlijke drainage . Handmatige oogst.
