Château du Coing de St. Fiacre has been in the same family since 1421, and sits at the meeting point of the Sèvre and Maine rivers in the heart of Muscadet's finest sub-region. Véronique Günther-Chéreau, who holds a doctorate in pharmacy, took over the estate in 1990 and has been joined more recently by her daughter Aurore. Unusually for an area dominated by négociants, all the fruit comes from the estate's own 50 hectares of Melon de Bourgogne vines, planted on distinctive gneiss soils and now in conversion to organic farming.

The wine is fermented with indigenous yeasts and spends the winter resting on its lees - a practice that, under appellation law, means it cannot be bottled until after the first Thursday of March following the harvest. The result is a wine with real textural richness alongside its natural freshness: light gold in colour, with green apple, white peach and apricot on the nose, a full, well-balanced palate and a crisp, mineral finish.
