Zoals de naam reeds zegt, ligt het gebied op een relatief grote hoogte met een gemiddelde van 500 meter. Dit zorgt voor stevige wijnen met toch voldoende fraîcheur. De bodems bestaan voornamelijk uit kalksteenbodems op klei, zeer arm aan organisch materiaal. De bodems bestaan uit "panal" een zanderige, leemachtige grond en sommige zijn voormalige rivierbeddingen met veel ronde kiezelstenen.
Na de handmatige oogst wordt de wijn vergist met schilcontact en korte pomp-overs gedurende 21 dagen bij een gecontroleerde temperatuur van 24ºC. Het vrijgelopen sap (wijn) wordt apart gehouden van de perswijn en wordt overgeheveld naar Franse eiken vaten van 300 liter voor een rijping van 6 maanden.

Nice and sturdy

A pain to put on the wall
4 stars only because to actually screw it into the wall you need either an angled screw driver, which we had to go buy, or a really really short screwdriver as the one that came with it is just a tad to long. Also the mollies that come with it our cheap and would not hold up on regular dry wall, which we found out, thank goodness, before we finished hanging it. As we were hanging it the top pulled right out of the wall. We had heavy duty ones at home already and used those. The shelf was a breeze to actually put together and once we got past the trouble of hanging it, is wonderful and looks great. So, 1. buy a better screwdriver, and 2. get heavy duty mollies.

Pretty and practical
