Waards Kalf - Kalfsmuis

Het Waards Kalf - een authentiek stukje Nederland dat je BBQ naar een hoger niveau tilt. Dit exclusieve kalfsvlees, met zijn kenmerkende pure en volle smaak, komt rechtstreeks uit het prachtige Hollandse veenweidegebied van de Krimpenerwaard. De kalveren zijn zorgvuldig geselecteerde kruisingen van het robuuste zwartbonte en het gespierde Belgische blauwbonte ras, geboren bij lokale melkveehouders.

Het verhaal van dit premium vlees begint al vroeg - tussen 14 en 35 dagen selecteren ervaren vakmensen de kalveren op basis van hun bouw, gewicht en groeipotentieel. Alleen de beste dieren maken kans om uit te groeien tot het befaamde Waards Kalf. Deze toppers krijgen een plek bij gepassioneerde kalverhouders in de Waard, waar ze met toewijding worden grootgebracht.

De eerste acht weken genieten de kalveren van een dieet van melk en ruwvoer, waarna ze overstappen op een speciaal ontwikkeld voedingsprogramma. Dit unieke dieet is niet alleen gericht op de gezondheid van de dieren, maar draagt ook bij aan de ontwikkeling van die karakteristieke structuur en smaak die dit vlees zo bijzonder maakt voor op je BBQ.

Het selectieproces is streng - na twaalf weken volgt een nieuwe keuring waarbij alleen de beste doorgaan. De finale selectie vindt plaats tussen de veertig en vijftig weken, waarbij uitsluitend de absolute topkalveren worden geselecteerd voor het Waards Kalfsvlees-programma. Deze rigoureuze selectie garandeert dat je altijd een premium stuk vlees op je BBQ legt.

Dit is kalfsvlees zoals het bedoeld is - puur, eerlijk en vol karakter. Perfect voor de BBQ-liefhebber die op zoek is naar iets bijzonders en die de pure smaak van hoogwaardig Nederlands kalfsvlees weet te waarderen. Of je nu kiest voor een malse kalfsrib, een sappige entrecote of een imposante tomahawk - met Waards Kalf creëer je gegarandeerd een onvergetelijke BBQ-ervaring.

VITELLO TONATO

Wij hebben zelf een lekkere Vitello Tonato gemaakt.
's Middags een mooie kalfsmuis gegrild en af laten koelen. 
Vervolgens de tonijn-mayonaise gemaakt.
Doe de tonijn, ansjovis, de helft van de kappertjes en de mayonaise in een maatbeker. Knijp hier nog een citroen in uit. Pureer het geheel met een staafmixer tot een gladde mayonaise. Proef of de tonijn-mayonaise op smaak is.
Denk er om, alleen even proeven...

Snij dunne plakjes van de kalfsmuis, doe de tonijn-mayonaise in een pastic (spuit)zak en doseer het naar smaak over het kalfsvlees.

Zet het geheel nog een half uurtje in de koelkast.
Snijd de rode ui in halve ringen. Maak de rucola aan met wat olijfolie, peper en zout. Leg wat aangemaakte rucola in het midden en strooi wat ui en kappertjes over het kalfsvlees. Maal er nog een beetje peper overheen en klaar.

  • 2 eetlepels mayonaise
  • 1 blikje tonijn op water
  • 3 ansjovisjes
  • 2 eetlepels kappertjes
  • 1/2 rode ui
  • Handje Rucola
  • olijfolie
  • Peper en zout.
