From the Dutch greenhouse ‘tropics’ of the Wageningen University & Research centre (WUR) we were allowed to use vanilla grown, harvested and fermented in The Netherlands. When grown and fermented under ideal conditions the vanilla receives its particular spice and deep lingering vanilla flavour aroma. It inspired us to make a real guilty-pleasure-done-right classic milk bar.

We found the perfect cacao match for the Dutch Vanilla on the Carribean ‘spice island’ of Grenada. On the L’Esterre estate plantation the Ramdhanny family grows organic Trinitario cacao which offers rich, complex herbal notes that serve as a perfect balance to the Dutch Vanilla. Add a dash of creamy Dutch cow milk to the mix and you have deep spicy milk bar which is irresistible to all milk bar lovers. To us, this is the grown-up sophisticated version of our favourite childhood chocolate poured into a bar.

Rich, sweet and spicy vanilla notes, underpinned with herbal and floral notes from the Grenada cacao, with a dash of banana in the background. The milk adds caramel and cream.

ABOUT INGREDIENTS

Heinde & Verre means “near and far”. The locally sourced Vanilla, Dutch cow milk and Dutch beet sugar allows the Grenada cacao to be fully appreciated.

 

L’ESTERRE ESTATE CACAO

L’Esterre is a family-run cocoa and nutmeg estate that’s been within the Ramdhanny family for the past seven decades. Literally translating as ‘Land of the East’, L’Esterre is tucked in the north-east of the island, surrounded by gentle hills of thickly forested land, bound by a river. Falling just on the outskirts of the rainforest, it benefits from frequent rainfall and rich, volcanic, fertile soil. Still very much at the heart of the family today, they grow organic cocoa & nutmeg, employing natural agroforestry techniques, mimicking nature with mixed cultivation, maintaining the rich soil and its biodiversity.

WAGENINGEN UNIVERSITY & RESEARCH VANILLA

Wageningen University & Research is widely regarded as the world’s top agricultural research institution. It is located in a region of the Netherlands known as the Food Valley.

Wageningen researchers are working on the cultivation of the vanilla orchid in greenhouses. Such controlled cultivation in greenhouses allows the horticulturalist to produce quality vanilla and to regulate the vanillin content. This also means Dutch Vanilla could help in the development of a drug against the yeast infection candida.

ABOUT VANILLA

Contrary to what the popular expression “plain vanilla” suggests, there is actually nothing simple or ordinary about it. Vanilla takes a long time to grow, needs specific care and is quite expensive!

Vanilla is a tropical vine orchid native to South America. The plant takes 3 to 4 years to mature, with a one day window in which to pollinate every flower by hand. Then a 9 month wait for beans to grow, harvest the crop and then another 2 to 3 months to ferment the vanilla pods. Hard work for farmers.

The price of vanilla is high due to the surge in demand driven by the switch from synthetic to natural vanilla, poor weather conditions and the crime surrounding vanilla. Vanilla is the second most expensive spice in the world after saffran.

80 to 85% of vanilla comes from Madagaskar and is tainted by money laundering, theft, violence, bribery and corruption. According to Reuters, in 2019 over 10% of the harvest was pilfered and is expected to increase every year. There are many documented cases of small farmers in dispair. This leads to early harvests in the season even before the vanilla pods are ripe enough just to avoid theft. The result is lower quality vanilla beans on the market. The high demand for natural vanilla increased deforestation on Madagascar as more and more famers try to “cash-in” on this valuable crop. Needless to say, this has a big impact on the delicate ecosystem on the island.

Dutch Vanilla can be part of the solution. Local vanilla can be grown sustainable in geothermal heated greenhouses. When vanilla is grown and fermented under ideal and fully controlled conditions the quality of the flavour will be exquisite, deep and lingering. With a fully transparent supply chain, Dutch vanilla is fully traceably and does not need to be transported over long distances.

 

LOCAL DUTCH COW MILK

The Netherlands is famous for its cheese and butter because of a long dairy tradition. The Dutch sea climate and terroir gives Dutch milk its specific rich flavour and is a perfect match for chocolate. We use full-cream Dutch milk to provide for a rich experience and lovely melt.

LOCAL DUTCH SUGAR

 

The locally grown sugar beet is an ideal sweetner for chocolate. Its neutral character allows cacao flavours to shine without adding flavours to the chocolate (other sweetners such as sugar cane adds for example a molasses flavour to chocolate) Because of the relative small scale of the sugar beet processing industry, organic and non-organic sugar beets are combined in the extraction proces. Research shows that the CO2 footprint of Dutch beet sugar is 4 times lower compared to the average sugar cane production. This is due to a higher yield, efficient farming, harvesting and processing and the fact that it does not need to be transported over long distances. Moreover, an additional benefit is that beet sugar has a lower water consumption than cane sugar.

Very thin. You get what you pay for.

You get what you pay for. I first noticed the softness which was great. The quality is very thin. They are cool which is great. I have not washed them yet. I would suggest washing them on cool and gentle by themselves. And because they are so thin I would fluff dry for an hour if you have that setting. The two things that damages clothes and sheets, etc. are if you have an agitator in your washer, those ruin clothes and the heat you choose for the fabric you’re drying I always wash my clothes on cold. I do not have an agitator anymore and on delicate and thin fabrics, I use fluff dry. It is cool, but it will dry, especially if it is thin and I’ve had to dry my fine delicates a little bit longer on fluff that way they don’t shrink because the shrinking comes in from the heat from the dryer so keep that in mind another good thing to remember if you got white sheets like I did is that when you use your detergent add a little bit of borax or laundry booster and they will help get them clean and sparkly white. I am on the fence about whether I would recommend this or not if you’re tight on money and you take good care of them I would recommend that you get them. I’m a linen freak and I buy mostly expensive sheets and I thought I would try this out so that’s where I’m at.

Finally we BOTH can sleep comfy!

So for years my boyfriend has always liked “jersey sheets” or “tee shirt” sheets or sheets made of flannel. He says he doesn’t like the feeling of cold “silky” feeling sheets as he’s always cold. I’m opposite and am always hot, and anytime we stayed in a nice hotel I looked forward to being able to sleep on cooler, taught, soft sheets for a couple of nights. I was able to deal with our old sheets but the issue we both hated was after awhile any sheet we got would get pilling. We even splurged and got a $60 flannel sheet which did the same thing forcing me to shave off these little annoying fuzz balls that make it feels like there is thousands of crumbs on the sheets. I also would wash our bedding once a week because the Jersey sheets seemed to “grow” as we move around in bed making it so the sheet was not taught and super annoying to lay on. The day I would wash them they would be comfortable but ultimately by the end of the week they would be almost hanging off our mattress. I ordered these sheets on a whim and got them the same day and immediately just threw out the jersey sheet and put this on (I didn’t even wash it, I know it’s gross but I was desperate for a comfy nights sleep and they came around 8pm) when I put them on I realized how soft and comfortable they felt. I also liked how the pillow cases are larger than most pillow cases that I have had in the past. We’ve been using these sheets for about a week and I love how I don’t wake up with my pillow popping out of the case anymore. The sheets have loosed ever so slightly since a week of sleeping but still are really taught and comfortable. They are cooler than flannel or fabric sheets and are initially cold when you first lay on them but I wouldn’t consider them “cooling” but they keep me from feeing extremely hot. They are way better than I ever would have expected for the price. I look forward to laying on them at the end of each day, even my boyfriend laid in bed the day I got them and said “wow I didn’t think I would like sheets like this, these are so soft!” And fell asleep immediately. We ended up ordering a second set in grey and the color is pretty. I still have yet to wash them, I usually use 2 tide pods when washing the bedding but I might get some fabric softener (as I hear it helps with pilling) to prevent the possibility of having that happen to these sheets in the future. I am hoping they hold up well after the wash and longer use. If they start to pill after wash, I will come back and update my review. Until then, I would highly recommend these sheets for the quality and the price point that they are offered at. Honestly, at this point even if they pill months from now I probably wouldn’t even be upset as long as they stay the same price I would just buy another set as they are just that comfortable and soft. UPDATE: So it has been about 3 months since I have purchase and used these sheets. They are still as soft as the day I first put them on. I’ve been washing them bi-weekly along with my comforter and pillowcases. I wash them with warm water using a combination of tide pods and added Downy fabric softener. They say to hang dry them in the description but I have been putting them in the dryer on medium and have been taking them out after around 20-25 minutes, they seem to dry extremely quickly. They have yet to have absolutely any pilling and also have not shrunk or stretched. Also I have a cat that is very active and also sleeps with me who enjoys kneading on my bed and I haven’t even noticed any signs of wear what so ever to the eye or to the feel. I highly recommend these sheets. I still have yet to even open the second set I purchased!
