Toques et Clochers laat zien hoe het klimaat de smaak van  witte wijn. beïnvloedt. In Limoux is er een microklimaat met vier verschillende klimaten: Marin, Autan, Océanique en Haute Vallée. 

Alle wijnen zijn op dezelfde manier gemaakt: dezelfde druif, dezelfde houtbereiding, en dezelfde liefde, maar ze smaken toch heel verschillend.

Océanique is de favoriet van de chefs in Nederland. Het werd zelfs 'Erik van Loo zijn bier' genoemd bij Parkheuvel in Rotterdam. De wijn is ziltig, fruitig en heel zacht tegelijk, dus veel spanning. Prachtig voor een chef om een gerecht bij te bedenken. Hij heeft echt alles wat een Chardonnay moet hebben zonder te "Chardonaaaay" te zijn.
