Druiven: 100% Aligoté

In de wijngaard: druiven afkomstig van verschillende percelen tussen de 10 en 90 jaar oud. Oogst met de hand. Rijen en stokken staan ruim uit elkaar aangeplant. Er wordt niet geploegd voor een levendige topsoil. 
In de wijnkelder: Na de oogst gaan de druiven direct door de pers. Echter wel een hele trage persing van 22 tot 48 uur. Zo genieten de druiven toch een korte maceratieperiode. Vervolgens wordt de most gevinifieerd in de kelder van Arnauds huis in Détain.
