Irizée Meunier 2016 is een pure expressie van Pinot Meunier uit de Vallée de la Marne, waar Régis Poissinet zijn biodynamische wijngaarden laat spreken zonder inmenging. Deze champagne komt van gemiddeld 35 jaar oude stokken op klei‑ en kalksteenbodems, wat hem zijn diepte en spanning geeft. De vinificatie verliep volgens Poissinet’s filosofie van levend evenwicht: natuurlijke vergisting zonder koude stabilisatie of filtratie, gevolgd door een volledig uitgevoerde malolactische vergisting. 

De wijn werd in gelijke delen opgevoed in eikenhouten vaten en roestvrij staal, waarna hij twee jaar in eiken rijpte om zijn gelaagdheid en romige structuur te ontwikkelen. Dankzij de kurkrijping en beperkte dosage van 2,3 g/L behoudt deze cuvée een indrukwekkende zuiverheid en precisie. Irizée Meunier 2016 is rijk en verfijnd tegelijk, een champagne die het karakter van de Marne en de diepte van Meunier in één glas samenbrengt.
