Het verhaal van Château Haut Blanville begint in 1955 toen Béatrice en Bernard Nivollet besloten om wijn te gaan maken in de Languedoc. Het wijndomein, dat ze volledig zelf hebben opgebouwd, ligt in de buurt van Montpellier. Ze maken wijnen die de uitzonderlijke diversiteit van de terroirs van de Languedoc onthullen. Allen gemaakt op een ecologische, verantwoorde manier waarbij veel aandacht gaat naar de zorg voor hun land, hun omgeving en de biodiversiteit. De afgelopen twintig jaar heeft Château Haut Blanville rigoureus individuele percelen geselecteerd, waarvan de druiven afzonderlijk worden gevinifieerd. Tegenwoordig bezitten ze 70 hectare binnen de appellatie Grés de Montpellier, verdeeld over vijf verschillende terroirs. Deze manier van handgemaakte wijnen levert een kwaliteit op die zeer gewaardeerd wordt door wijnliefhebbers.
