De wijngaarden van Cuatro Pasos liggen in de Bierzo-vallei, waar wijngaarden en oorspronkelijke begroeïng elkaar afwisselen en de druiven beschermen tegen de directe invloed van de zon. Hierdoor krijgt de mencía-druif meer frisheid. Het wijnhuis selecteert zorgvuldig de wijngaarden in de vallei waar ze als eerste beginnen met het oogsten, om de frisse en intense stijl van de Cuatro Pasos wijnen te kunnen waarborgen. Door de druiven direct te persen bij binnenkomst bereikt het sap een delicate kleurextractie. Door de koude gisting bij 18°C blijven de fruitige en bloemen aroma’s behouden.
