Het Ibérico varken, met herkenbare zwarte poten, loopt vrij rond in heuvelachtige bosgebieden met een mediterraan klimaat. Daar smikkelt het van de eikels van Quercus bomen - van oktober tot en met maart eet het Ibérico varken wel 6 tot 10 kilo van deze eikels per dag, naast gras en ander natuurlijk voer dat ze zelf tegenkomen. De eikels zorgen zorgen voor de karakteristieke, nootachtige smaak van het vlees. In de zomer eten de varkens een mengsel van tarwe, maïs en gerst. Het klimaat, de vrijheid van de varkens en hun voedsel zorgen bij elkaar voor een hoogwaardige kwaliteit varkensvlees met een hoog percentage onverzadigde vetzuren.
