Black Tiger garnalen met kop: waarom met kop?

Restaurants die weten wat ze doen, kopen garnalen met kop. De kop bevat de hepatopancreas - een orgaan vol smaakintensieve stoffen die tijdens het bakken oplossen in het kookvet. Dat vet wordt daarna de saus. Zes tot acht stuks van maat 6/8 (6–8 stuks per pond) zijn grote, vlezige exemplaren die indruk maken op het bord.

Black Tiger gamba's bereiden

  • Pan met knoflookboter: Gloeiend hete pan, olijfolie, knoflook. Gamba's erin, 2 minuten per kant. Finish met boter, peterselie en citroen. Serveer direct met brood voor het kookvet.
  • BBQ: Direct op het rooster op hoge hitte. 2–3 minuten per kant. Met een marinering van knoflook, citroen en olijfolie.
  • Bisque: De koppen zijn perfect voor het trekken van een rijke gambasbisque.

Bewaren

In de koelkast (0–4°C). Dezelfde of volgende dag bereiden. Invriizen kan prima als ze nog niet ontdooid zijn.
