In seguito all'accurata vinificazione, lo spumante sosta per minimo 30 mesi: dopo il dosaggio avviene una sosta di alcuni mesi in bottiglia, prima di essere messo in commercio.
Originale aperitivo, accompagna preparazioni a base di pesce e molluschi.
