Prima della fermentazione alcolica, eseguita in botti di legno americano, il mosto rimane alcune ore a contatto con le bucce a bassa temperatura. Successivamente rimane alcuni mesi negli stessi contenitori arricchendosi delle sensazioni cedute dalle fecce fini. Un bianco di grande struttura e persistenza.
Viste le caratteristiche può essere abbinato con le carni bianche oppure ai pesci alla griglia.
