Felsa Yehr is our Amish interpretation of a cave-aged Manchego-style cheese and is one of our signature, gourmet cheeses. This all natural, raw sheep milk cheese is hand-made and stored exclusively in our cave for 18 months, with the 5 lb wheels being continually turned by hand. This is a hard, dense cheese with an unexpectedly smooth texture and a dark paste. The flavor is a complex blend of earth and grass with subtle grape undertones. The flavor is intense, but with a clean, smooth finish. Felsa Yehr means “rock aged” in Pennsylvania Dutch.
Felsa Yehr is made for a cheese board and balances many sweet and spicy foods on the charcuterie board. As an appetizer, it goes well on a French bread or on warm wedge of toast. This farm stead cheese demands a spicy mustard or tangy red beets along with fresh grapes and quince paste. It pairs well with crisp, dry white wines and a wide range of intense red wines. Felsa Yehr also is the perfect “to go with” for all heavier brews and hard cider. This cheese is made for easy entertaining: just put out a wheel of Felsa Yehr, your favorite beverage, and a cheese knife, and let your guests help themselves.

The sheep milk for this cheese is provided by two families in Clarion County, Pennsylvania. The sheep are grass fed and produce milk of high fat and protein content. Lambing begins in December and finishes in May. The long lambing period is one secret to the intense flavor of Felsa Yehr.

Another good addition to this publisher's collection. The book is well organized, flows well and is very readable. The main thing I have like about this series is that they don't just cover the "highlights," although they do a good job on those, but how they cover more of the daily lives of the people. I was surprised at exactly how hard the people's lives were by choice, not just men but woman as well. I can't imagine being drafted into the military at age 5 or 6 and staying there until you were thirty. And eating "black soup" a concoction made of pork, pigs' blood, onions, salt and vinegar. To paraphrase a quote, it's no wonder Spartans were prepared to die when all you eat was this soup! I was also surprised by the freedoms including education and land ownership of the woman of Sparta giving the era.....and the sexual freedom they had was more surprising. There is a lot more information of interest. This is a good book and most will enjoy reading it

An Enthralling Overview of the Proud Spartans
Format: Kindle
This is a very good book. It is well researched and extremely well written. It is easy to read and easy to understand. Although this book is just an overview of the Greek city-state of Sparta, it does very well cover Sparta's unique history. Learn about Sparta's rise in military fame and the battles they fought. Learn how all of Sparta trained to become the healthiest and fittest city-state in Greece. Learn about daily life for all the classes of people in Sparta, even the kings and queens. Learn how Sparta became independent and supplied everything the city-state needed.
This book is well worth reading and I highly recommend it. It will be a great book to add to anyone's history shelf.
