The Name
 McLaren Vale is located near some of the 
best beaches in Australia. This coastal region 
provides locals with gnarly surf breaks, and a 
maritime climate perfect for growing Fiano. 
Much like the energetic coastline, one sip of 
this refreshing wine will have your neurons 
surfing sensorial, synaptic brainwaves.
 The Vintage
 Early winter was wet, but late winter and 
spring were dry. Budburst was early, but 
mild weather delayed flowering. Late 
spring and early summer rain filled the soil 
profile for the first time in summer. High 
disease and vine vigor required significant 
attention. Warm, dry conditions in January 
and February favoured quality. Whites show 
high quality with good acidity. McLaren 
Vale Chardonnay, Riesling, and Sauvignon 
Blanc were harvested before the March 
heatwave, while other whites and reds 
benefited from it. Most premium Shiraz and 
Cabernet Sauvignon were harvested before 
the heatwave and show very good quality. 
Italian, Spanish, and Portuguese varieties 
thrived, producing excellent wines. Adelaide 
Hills had low yields but high quality. Grapes 
for Botrytis (Botryotinia fuckeliana) are still 
hanging.

 The Winemaking
 Small batches of grapes are gently 
crushed, chilled, and then basket pressed. 
Fermentation was long and moderately 
cool to retain fresh fruit characters, and was 
conducted in stainless steel tanks. Only free
run juice was used for the final wine with no 
malolactic fermentation.
 The Characteristics
 Pale straw with a hint of yellow, this wine 
exudes lifted aromas of honeysuckle, lime, 
lemon sherbet, and honeydew. The palate 
is rich and dense, featuring vibrant flavours 
of finger lime, guava, and tangerine. Its 
natural creamy texture is complemented by 
a focused and lengthy acid drive, supporting 
the dense and powerful profile. Beautifully 
balanced and brimming with complexity, 
this wine offers a sophisticated and 
memorable tasting experience.

Ive tried a few different brands of biltong and made my own. I have to say that this wasn't my favorite. Believe me, i wanted to like it. The taste was sour and most of the bag was pulverized shreds. :( I did find that letting a bit airdry in a bowl made it a little more palatable, but honestly it'sjust sitting in my fridge still, where normally I'd have eaten the whole bag in a day or so. I will say that there was a decent amount for the price. The texture and cut were good on the whole pieces. Also, some of the bites left a weird coating and nasty taste on my tongue, like baking soda or something, but definitely an off taste. I had my own beef jerky store for several years, so I'm a connoisseur, but no snob. -----update 8/13/2019------- I contacted customer service via the email on the bag and got a response. They sent me a new bag and here is the email I sent them back. Very happy now. ....The biltong showed up last Thursday! I'm sorry i kept forgetting to email you. It is delicious. It's night and day difference between the bag I got through Amazon originally. This bag was pristine and the taste is spot on. Every piece is a perfect slice, no shreds or fluff. Dark, rich brown color, not hay colored like the old bag. I really think that the other bag got very hot or something and out the taste off. Thank you so much. Now I know that if I am in the mood for biltong, Ayoba-yo is a good choice. Thanks for the customer service as well.....

I have been lucky to visit South Africa a few times in my life. What is not lucky is coming home to the United States and craving biltong. Biltong is a magical, sugar-free, barely processed jerky and once you try it, you will never want to eat American beef jerky again. Sour moist meat

I had a hankering for jerky and found biltong instead. I didn’t know what made it different, but I was willing to try. I was very surprised how moist it was!! It’s better than the jerky here. If I wanted to gnaw on leather then I’d get my belt instead of paying money for dried meat. I liked that it didn’t have sugar. However , the flavor was confusing. It was mostly sour, like too much vinegar. Other reviewers mentioned that too and I must agree. I’m not sure how it’s suppose to taste but this experience makes me hesitate buying any more.
