Davide has reimagined the Roman classic with chicken breast in place of veal, creating a lighter, healthier version that still honours the traditional flavours. Topped with crispy jamon and sage, and finished with a delicate white wine sauce, it’s every bit as elegant as something you’d find in a trattoria.
