For the best flavor, pick the leaves when young, succulent, and tender. Sorrel adds citrusy brightness to salads and as an accent to rich fish or dairy dishes. Soil & Water: Grow in rich soil high in organic matter and nitrogen. They perform best with consistent moisture; drier conditions will increase the intensity of flavors.

Planting & Growing: To start indoors, plant seeds 1/4" deep in flats. Direct seed outdoors after the last frost, with seeds 2"-3" apart, 1/4" deep. Thin to 12"-18" apart. Easy to grow in containers. Lift and divide this perennial in summer.

Harvesting & Storage: Pick baby leaves before they reach their mature length of 8" and use them within a day or two.
