It prevents sugar from crystallizing and acts as a leavening agent for baked goods. Used together with Sodium Bicarbonate it will produce a baking powder. A pinch of Cream of Tartar added to your water when boiling vegetables will help them to retain their fresh colour. A common use away from cooking is its use in creating playdough for children.
