The “La Mesa” estate sits on a high-altitude plateau in the Los Altos region of Jalisco, Mexico. The agave plants are hand-harvested at peak maturity, cooked in traditional ovens, fermented with wild yeast in open-air wooden vats, and twice-distilled in copper pot stills.
