Plant-Based Shiro Dashi, Made Entirely from Japanese Vegetables

Why Chefs Choose This

  • 100% plant-based (動物性原料不使用): No bonito, no fish, no animal-derived ingredients. Genuine vegan dashi, not a compromise.
  • 6 domestic Japanese vegetables: Dashi extracted from onion, carrot, burdock, mushroom, and more. Real vegetable umami, not MSG-driven.
  • Organic white soy sauce (有機白しょうゆ使用): Keeps the colour light so dishes stay pale and clear, just like traditional shiro dashi.
  • Solves a real menu problem: Vegan and vegetarian guests can now have authentic-tasting Japanese dishes without any ingredient substitution.

How to Use

  • Vegan miso soup: Dilute as your dashi base, add miso paste, and you have a fully plant-based miso soup with no workarounds.
  • Chawanmushi and egg dishes: Use as the stock for savoury custards and tamagoyaki. The light colour keeps the dish pale and elegant.
  • Nimono and simmered vegetables: Season root vegetables, tofu, and mushrooms with a gentle, rounded umami base.
  • Cross-cuisine applications: Use as a vegan stock base in risotto, cream sauces, or wherever you need invisible savoury depth without animal products.

Shiro dashi (白だし) is a light-coloured Japanese stock concentrate used as a foundation for soups, sauces, and seasoning. Traditional versions are built on bonito (dried fish flakes) and kombu, which makes them unsuitable for vegan and vegetarian diets. Shichifuku's Vegetable Shiro Dashi (やさしい味の野菜白だし — "gentle-flavoured vegetable white dashi") replaces the bonito entirely with dashi extracted from six types of domestic Japanese vegetables, and uses organic white soy sauce (有機白しょうゆ) to keep the colour light. The result is a genuinely plant-based dashi concentrate that delivers the same clean umami foundation as conventional shiro dashi, without any animal-derived ingredients. For kitchens running vegan and vegetarian Japanese menus alongside traditional ones, this eliminates the need for a separate homemade stock.

What does vegetable shiro dashi taste like?

The flavour is gentler and rounder than bonito-based shiro dashi. You get a broad, savoury warmth from the vegetable extraction — onion sweetness, earthy mushroom depth, and a subtle burdock nuttiness — rather than the sharper, more direct hit of bonito. The organic white soy adds a light salinity without the colour of regular soy sauce. Unlike many vegan dashi alternatives that rely heavily on kombu and mushroom powder (and can taste flat or one-note), this version has genuine complexity from using six different vegetables. It's deliberately labelled やさしい味 ("gentle flavour"), and that's accurate: it supports other ingredients rather than dominating them.

What is the difference between vegetable shiro dashi and regular shiro dashi?

Regular shiro dashi is built on bonito (dried skipjack tuna) and kombu, making it unsuitable for vegan or vegetarian diets. Vegetable shiro dashi replaces the bonito with umami extracted from domestic Japanese vegetables — onion, mushroom, burdock, carrot, and others. Both use light soy sauce to keep the colour pale. The flavour profile is gentler in the vegetable version but still delivers the clean umami foundation needed for Japanese cooking. Shichifuku's version uses organic white soy for added quality.

Is this suitable for a fully vegan Japanese menu?

The label states 動物性原料不使用 (no animal-derived ingredients used). This means it can be used as the stock base for vegan miso soup, simmered dishes, rice seasoning, and sauces without any workaround or substitution. For restaurants offering both traditional and plant-based Japanese menus, this is the simplest way to maintain flavour consistency across both without making dashi from scratch for the vegan option. Always verify allergen and dietary claims against the back-of-pack declaration before listing on your menu.

How should I store vegetable shiro dashi after opening?

Refrigerate after opening and use within 4–6 weeks. Without the preservative effect of bonito extract, plant-based dashi concentrates are slightly more sensitive once opened. Store upright to prevent leaking. Before opening, keep in a cool, dark place — no refrigeration needed.

Versatile spray that works well for sensitive skin
Lately I've been hearing so much about hypochlorus acid and its multiple benefits and uses. Being that I really like Coola products, when I saw that Coola had made a hypochlorous acid face spray, I was eager to give it a try. I'm glad I did! As someone with sensitive skin that gets irritated from perspiration when I work out, I was hoping this spray might calm my post-workout skin...and it did. The mist comes in an attractive spray bottle. The spray that comes out is at the intensity of somewhere between a fine mist and a coarse spray; it sprays a good amount to wet your face rather than just a very fine coating. Upon spraying on my skin that was red and warm from my workout, I immediately felt a cooling effect. I wiped the spray in to my skin a bit, and it both cleared away the perspiration, and felt soothing to my post-workout irritation. It felt very different from other toners or astringents I'd used, and my face felt clean, refreshed and unexpectedly soft after use. I later tried the recovery mist on a small area of rash I developed on my neck. I had a similar experience in that it cooled the skin, and my rash appeared minimized, as well. My only issue with this product is the scent. The spray has a scent that smells like a faint version of chlorine bleach...which was disconcerting, since I'm spraying it on my face! I actually looked it up and apparently that's just the scent that hypochlorous acid has...so it's not specific to just Coola's product. Fortunately, the bleachy scent dissipated quickly. Overall, I'm happy with this product, and found it useful for my irritated skin. While I tried it for post workout skin and a rash, apparently it can be used for bites, scrapes and acne as well, so it seems to be very versatile. So if you can get over the initial bleachy scent, it's definitely worth giving a try. Priced at $20 for the 3.4 ounce bottle, which should last a while, I find it to offer a good value for the money, as well.

Surprisingly Effective for Redness & Post-Sun Skin Recovery
This stuff actually works. I’ve been using it after sun exposure, and it genuinely seems to help calm, soothe, and hydrate my skin. I usually spray it on before applying my hydrating serums and moisturizer, so it’s part of a larger skincare routine, but I definitely feel like this mist plays an important role. My skin feels less irritated, looks less red, and just overall more refreshed afterward. The spray itself is lightweight and easy to use, with no sticky residue or heavy feeling on the skin. It layers well with other skincare products too, which I appreciate. Overall, this has become a really nice recovery step in my routine—especially after being outdoors or whenever my skin feels stressed and dehydrated. Sometimes skincare products make very dramatic promises and deliver absolutely nothing but scented disappointment. This one quietly does its job.

Truly refreshing right away
I am someone who gets a red face from even the most slight physical exertion, even when I'm in peak physical shape (I've been this way my entire life), so anything that reduces redness and heat is something I'll pretty much instantly try. I already use several other Coola products (their hair sunscreen is amazing) so this was interesting right away. After going on a brisk walk pushing the stroller (while pregnant by the way), I tried this spray on my face and chest. It was genuinely refreshing immediately! It didn't bother my skin, was a good amount of product in one spray, and didn't have any kind of weird smell. Honestly for $20, I would buy this repeatedly every spring/summer, especially in the Midwest! I'm considering ordering an extra bottle just for my daughter to take with her to summer camp. Pro tip: store in the fridge for even more refreshing-ness!

Amazing ability to calm red, itchy skin but pricier than alternatives
When I saw this product, I was a bit skeptical. I have extremely dry skin that’s prone to red, itchy spots but it seemed unlikely a misty spray would be anywhere near as beneficial as the creams and ointments I’ve turned to over the years. Since I’ve used other COOLA products and really liked them, I decided to give it a try and I was pleasantly surprised. I tried it on a couple of red patches on my face. There’s an immediate feeling of cooling relief (which leads me to believe this would also be a great solution for a burn), but what I found amazing was the redness decreased significantly and immediately. After a few minutes, I was able to put on makeup, forgoing concealer on those spots. I also tried it on a red, itchy spot on my leg, again calming the itch and decreasing the redness. Just because it seemed unwise to start using hypochlorous acid, the active ingredient in this spray, knowing nothing about it, I did a bit of online research. Apparently, not only is it considered safe and recommended by dermatologists for eczema like conditions, it also is antibacterial and can be used to keep cuts clean and help them heal. I’m sold on the concept of this spray. My one hesitation is that it seems to be more expensive than other similar options – particularly when you do the math to determine cost per ounce. I am a real fan of the COOLA brand, but given that my skin is such that I’ll probably use this regularly, the cost differential may become prohibitive. I would highly recommend this product for anyone who wants it on hand for the occasional sunburn or blemish. For those like me who would benefit by using it once or more per day, while still singing its praises as to efficacy, I would have to qualify the recommendation due to price.

Refreshing, Recovery Mist
I’ve been using this COOLA Recovery+ Face Mist right after running, and it does wonders. After a run, my face usually looks flushed and feels a bit irritated from sweat and heat. A couple sprays of this helps tremendously. It provides an immediate cooling and refreshing feel without irritation. It really helps reduce that post run redness faster and it feels very gentle. It’s super easy to use. You just spray it on and let it dry.
