小麦が主原料の素材を活かす醤油

白醤油の特徴は色が淡くて、醤油の主張をできる限り抑えているところです。濃口醤油を使って煮物をすると醤油の色と香りがついてしまいますが、白醤油の場合だと、それがありません。お吸い物や茶碗蒸し、炊き込みご飯など、素材の彩と風味を活かしてくれます。

また、オリーブオイルや柑橘果汁との相性もよいので、ドレッシングに使っていただくのもおすすめです。醤油:油:酢=1:1:1で混ぜるだけでフレッシュドレッシングの完成です。

しろたまり/日東醸造(愛知県碧南市)

原材料は小麦と塩と焼酎のみ。白醤油としての味と風味を追求した結果、大豆を抜いて半分の仕込水でつくり製法になりました。大豆を使っていないので醤油とは定義できず小麦醸造調味料という表記になっていますが、その素材を引き立てる存在感は料理好きな方から多くの支持を得ています。

醤油は大豆のイメージが強いと思うので、小麦100%と言われると味の想像がつかない方も多いと思います。「大豆」=うま味/「小麦」=甘みや香りなので、意図的にうま味成分を抑えて、小麦の甘みや香りを追求した調味料です。

子供の頃のお弁当のおかずで大好きなものは甘い卵焼き…そんな方は多いと思います。でもきれいな黄色の甘い卵焼きって意外と難しいもの。そんな時はしろたまりの出番です。卵のきれいな黄色をだすのはお手のもの。卵のうま味を活かしながら砂糖の甘みも引き立たせ優しく甘い卵焼きに仕上がります。さらに甘酒をプラスすればフワフワ感も加わりますよ。

ヤマシン白醤油/ヤマシン醸造(愛知県碧南市)

創業200年超の白醤油の専業メーカー。醤油の色をつけずに素材を活かす醤油で料理に使いやすい。お吸い物や炊き込みご飯などにはもちろん、オリーブオイルとの相性がよいのでパスタやドレッシングなど洋食に使っていただくのもおすすめです。

ヤマシン白醤油は、「生引き(きびき)」といって桶の下部に開けられた穴に付ける「のみ口」という栓から桶に溜まった液体を引き出し、生引きして残った麹に今度は100%の量の塩水を加えてさらに3ヶ月おき、そのままもろ味ごと圧搾して得られた液体が二番搾りとなり、生引きの一番と圧搾の二番とをブレンドした後瓶詰されます。

健康のために毎日サラダを食べている方におすすめ。自家製のドレッシングは醤油:油:酢=1:1:1で混ぜるだけで簡単につくれます。白醤油でドレッシングを作ると、あっさりさっぱりなフレンチドレッシング風に。野菜の甘みが引き立ちます。ごま油やオリーブオイルに変えると味わいがまた変化して、毎日のドレッシング作りが楽しくなりますよ。

有機白醤油/七福醸造(愛知県碧南市)

有機JASの小麦、大豆が主原料で、ほのかな甘みのある上品な塩味が食欲をそそります。白醤油の中では仕込み期間が半年~1年と長いのが特徴です。冷蔵施設にて温度など24時間管理できる深層発酵タンクで仕込んでいるため、年間を通し15℃程度に保つことで発酵を抑制し通常より長い期間熟成でき、白醤油の特徴である琥珀色を生み出すことができるのです。

まずは素材を引き立てたい料理にお使いください。だしをしっかりきかせたお雑煮やお吸い物、茶わん蒸しなどは具材の彩りも豊かに仕上がります。醤油の色をつけたくない炊き込みごはんにもおすすめ。小麦が主原料なので糖分が高く上品なうま味を感じます。

基本的に白醤油は素材を活かすので料理を作るときに使用するのをおすすめしていますが、この有機白醤油はかけ醤油としても◎。醤油感はほとんど感じませんが小麦の香りが強くないので、小麦の甘みを感じながらほんのり塩気を与えてくれます。ひきわり納豆と卵かけご飯がおすすめです。

So, as other reviewers make clear, this is very similar to Pack Darling and The Beta. It’s much closer aligned with The Beta, in plot and maybe more like Pack Darling with characters. That being said, I don’t hate this…..but it wasn’t great either. It’s both books mentioned but just….less. Less angst, less emotion, less feeling. The plot feels very half fleshed out, and the “bad guy” feels underwhelming. I didn’t really feel any real emotions from and of the male leads, except maybe Oliver. The others fell sorta flat for me. And Mika makes herself out to be this big bad ass straight outta training and then we never see it from here again with the one fitting room incident as the exception. SPOILER: The whole, “Oh, I’m actually probably an Omega, but I don’t wanna be but I do actually wanna be but no one can ever know my secret that I do nothing to hide “ thing fell so flat. She never commutes to believing she was secretly an omega, but also mentions her “secret” a lot. It just felt so manufactured. I’m intrigued enough to read part 2 and see how the author closes everything out, but this is not one I’ll recommend or ever come back to.

I love this type of story. And omegaverse is one of my all time favorite genres. But there are a few things that pulled me out of my enjoyment while I was reading. It was repetitive at times as well as struggled with telling not showing. So we didn’t always feel like we were experiencing things with the main character. There were also some plot holes but they may still be answered in part 2. Now this isn’t to be said I didn’t enjoy parts of the story. I loved the almost instant love between Mila and Oliver. And how he started changing around her.
