Located close to the archetypal Kent village of Chilham, it is built with sustainability at the fore. The majority of the sympathetically designed winery is subterranean and provides a natural gravity-led winemaking process. The design allows an uncompromising approach to quality winemaking. This exciting journey began in 2015 when two close friends, Patrick McGrath MW and Pierre-Emmanuel Taittinger, agreed that they would establish a new English sparkling wine estate. Fermented and matured exclusively in temperature-controlled stainless-steel vats, this Classic Cuvée captures the purity of its fruit. Undergoing full malolactic conversion, the wine develops a refined texture and subtle creaminess, balancing its natural acidity with a smooth, rounded mouthfeel. Expect aromatic flavours of orchard fruits, peach, and quince, with a touch of white pepper. Perfect as an apéritif or with canapés, smoked salmon, and oysters.
