Beekeepers are unusual, as their activity (which is often "just a hobby") is the production of food that may be sold to the public. Many will see the process through from the very beginning - making hives, sourcing bees, setting up apiaries, and managing the bees, right through all stages of harvest, processing, packing, labelling, to retail sale.

Training is usually through local beekeeping associations, who often use a curriculum set by the British Beekeepers Association; this focuses on the practical sides of beekeeping, husbandry and the like, and it is intended to lead on to further study with Modules, and even the National Bee Diploma, the pinnacle of the possible qualification.

The BBKA's Module 2 assessment includes food production and hygiene: the "bee press" occasionally have articles or a mention.

There is little reliable guidance for beekeepers on the food production side, which is quite surprising. Although many beekeepers are hobbyists, with a few hives, and very limited sales, many have a number of hives. Of course, there are also bee farmers with many hives, producing significant quantities of honey and related products in commercial quantities. It's surprisingly easy to progress from a couple of hives to several, to having many!

There are often enquiries on social media about honey, processing, or legal requirements. The sometimes less-than-expert responses often perpetuate old practices or information, which were not always correct to start with. For instance, I've seen it stated that in order to label honey with its botanical origin, it needs to contain variously 40% through to 70% of that nectar; but neither of these numbers is mentioned in the UK legislation. Another misrepresentation is that you don't need to register as a food business if premises are used for less than five days in five consecutive weeks: this is based on the Food Premises (Registration) Regulations 1991. However, these were superseded by Retained Regulation (EC) 852/2004, which contained no such exemption; there's full information in the relevant paragraph.

In this book, Andy (an Environmental Health Officer for 46 years and a beekeeper for 30) explores the Consumer Protection law that applies to beekeepers and bee farmers. The book principally deals with Food and Food Safety, and includes a full HACCP that covers both extracted and comb honey. The book includes other products – Candles, Melts, Wraps and Polishes. The intention is to give as comprehensive picture as possible of both the legal requirements, and at the same time, practical advice to achieve the highest quality product and achieve a high Food Hygiene Safety Rating.

Andy Pedley has been keeping bees for 30 years, and as an Environmental Health Officer, developed an interest in the law on food safety as it applies to bee keepers and honey production about 14 years ago, realising that there was a fair amount of misinformation and traditional, but not always good, practice, among beekeepers. In 2009, he authored a series in BeeCraft, a UK magazine, on the Food Safety Legislation, and has authored other relevant articles for them too – on the Honey Regulations and Recycling jars.

The flavor of this is very smooth and not bitter like some other matchas I’ve tried in the past. It’s very easy to incorporate into water and tastes amazing with soy milk and strawberry syrup. I’d say this is very fresh tasting and smelling. I did have consistent energy throughout the day with no crash which is a plus. Only warning is be very careful because the tin and product are very light I accidentally knocked it over the first day I had it and half the matcha fell onto the floor and was wasted. I’ve been drinking matcha for years and I’m very particular with the quality and how I make it. I’ve tried many matchas, so I hope my review helps you. Would I buy again? - Yes. This matcha is great for someone who likes quality matcha without spending too much money. I would drink this as my daily matcha. - I can taste the difference between this matcha and a more expensive one, but I’d say this (price point aside) is about 90% in quality, taste, and experience if the expensive ones are 100%. Price: $12.59 after tax for 30g (bought on sale) Packaging: - Tin foil seal with pull tab, matcha loose in container, no bag inside of container - Comes with a rubber piece to keep matcha sealed after opening, very nice - Comes with a small metal spoon? - Top and bottom pieces separate from main container but don’t seem to have a function (see picture) Matcha: - In comparison to other high end matchas, this seems ever so slightly more coarse ground but doesn’t seem to have an effect on experience (no grainy feel) - the flavor has slightly less “matcha flavor” but for the price point, it exceeds my expectations, may just have to increase the ratio of matcha - Color: vibrant green, not dull oxidized color like some low end matchas - Mouth feel: Nice buttery and smooth - Caffeine: I am unfortunately not sensitive to caffeine so I can’t speak on the topic How I make my matcha lattes (so you can check my credentials or learn how to make as a beginner getting into matcha): 1. Heat water to 175°F/80°C, soak bamboo whisk for 5 minutes before using to soften the bristles 2. Two scoops of matcha (≈2g) with bamboo scoop (not provided with this product) into matcha bowl through a sieve (if you have one) 3. Slowly pour water into bowl, about 2oz/60ml 4. Use the whisk to gently swirl the matcha so that there is no dry powder left 5. Whisk vigorously in a “W” shape for 20 seconds (careful not to press the whisk into the bottom of bowl, it’s fragile) 6. Bring the whisk to the surface of the matcha and gently whisk in a “W” shape until the bubbles are broken up into smaller ones, aka “microfoam”, about 10 seconds 7. Finish up by swirling the matcha with the whisk in a gentle circle shape, leaving a small peak of foam in the middle as you pull the whisk from the surface. 8. (Optional) Combine with ice, milk (I use half and half, about 8oz), and sweetener to make a latte (add the sweetener after it’s in the glass so that you don’t expose sugar to the whisk) 9. Rinse matcha whisk and bowl with hot water, place whisk carefully back on holder, making sure not to snag any bristles For beginners: - Don’t use boiling water, it will burn the matcha and cause the flavor to suffer - BE SO GENTLE WITH THE WHISK PLEASE, and make sure you soak it before hand or it will be more prone to breakage - Get a whisk holder. The whisk will be prone to mold if stored upside down (bristles up) - When soaking the whisk, there should be a faint line about 1 cm down from the string binding, that’s where the water line should be. Don’t submerge the binding area or it will be more brittle and prone to mold. - A sieve is a worthwhile investment for a smooth matcha experience - All matchas naturally oxidize, so use within 1-3 months for a good experience, it’s not a feature of bad quality matcha, it’s just how all matcha is - Color matters. If it’s dull, that means it is old or bad quality, bright vibrant green is what you’re looking for - It’s normal for matcha to “settle” on the bottom of the glass after sitting for a while, just give it a swirl to remix it I wish you all luck on your matcha journey! If you’re a beginner, there’s a lot to learn, but it’s so worth it!
