As more and more people are interested in light roasted specialty coffee, we realized it was finally time to add a light blend to our core line-up of whole bean coffee. 

We are incredibly excited to add this one to the stable at Smoking Gun Coffee. Light roasts are often reserved for single origin coffees, which is great, but what if you want a light roast coffee to drink at home that is incredibly consistent and balanced? Well, now you have that option. Meet Palomino!

We set out to craft a blend that hit all the notes coffee lovers want from light roast profiles: a bit fruity, some pleasant acidity and some floral aromas. We also wanted to make sure it was consistent, approachable and incredibly balanced. In short, the perfect coffee to brew at home and drink black, but you can also offer it to guests without them thinking it's "too weak" or "too acidic." It's just darn fine coffee, roasted on the lighter side, that everyone can enjoy.

After a whole bunch of test batches, we found the perfect combination and ratio of beans, and the perfect roasting temperature and drop time.

Palomino delivers some subtle fruit notes like pear and apple and it has very pleasant and mellow acidity. Plus, it's sweet and toasty - like caramel - with a surprising amount of body for a light roast coffee. We were all very pleased and proud of how it came out.

Great book!

I really like this book it includes: ladybug, bumblebee, praying mantis, firefly and (monarch) butterfly. So a good selection of bugs a small child is likely to experience in their yard or park in North America. For the photo board book aged children I really prefer that they discuss vocabulary that the child will be able to use to describe the world around them so I appreciate that most kids will see most of these bugs fairly easily and frequently. I did question the praying mantis since I see them much less frequently than the other bugs in the book but my husband said it is an exciting bug when kids do see it so he supports the choice--I think a fly or mosquito might have been a somewhat more useful choice as far as vocabulary our son could use most often. I liked that they did say the butterfly was a monarch but typically used butterfly so if a child lives where other butterflies are more common they learned the more general term. I think fireflies are less common in some regions but they are so magical as a small child that I think it is a good choice.
