Vigor, produced by Sangiovese and Merlot grapes grown in the Marche hills, rolling down the Appennine mountains to the Adriatic sea, is a very versatile wine on different food matches.
The vineyard from which Vigor originates is situated on our estate in the municipality of Osimo, at about 150 meters above sea level, on a south-eastfacing hillside. The terrain, which started out as marine formations from the Pleiocene-Pleistocene era, consists of very deep soil, a very calcareous clay loam. The yield is limited by very close pruning and targeted thinning, and can vary from five to six tons per hectare according to the season.
The grapes are picked by hand and collected and transported in boxes. Harvesting starts at the beginning of September with the Merlot and finishes with the Sangiovese, a fairly late variety, in the last days of September, when the grapes have reached peak condition with an advanced degree of phenolic ripening.
The grapes are destalked and lightly pressed, then undergo maceration for 10- 12 days in steel fermentation vats. The temperature in this period is kept at between 26º and 28°C. As soon as the alcoholic fermentation is finished, the wine starts the malolactic fermentation. The wine next moves on to the ageing process in barriques on their third or fourth time of use, for a period of about 8 months. After assemblage, the wine rests in bottle for several months.
