Or consider murnong—once the staple food of Aboriginal Australians, this small root vegetable with the sweet taste of coconut is undergoing a revival after nearly being driven to extinction. And in Sierra Leone, there are just a few surviving stenophylla trees, a species now considered crucial to the future of coffee.

Throughout this original and entertaining book, Saladino shows that when foods become endangered, we risk the loss of not only traditional foodways, but also flavors, smells, and textures that may never be experienced again. And the consolidation of our foods has other steep costs, including a lack of resilience in the face of climate change, pests, and parasites. Although we have queen-sized beds, we typically use standard-sized pillows. One of the quilt sets I got this Christmas time came with queen sized pillow shams, and the standard pillows just didn't fill them properly. I could have sewn flanges on either side of the shams, but I decided to order these pillows instead. The are almost wide enough to fully fill those shams that started all this additional purchasing. (I also ended up ordering pillow protectors for the queen sized pillows.) The pillows are fluffy and substantial for now. My husband manages to flatten out pillows almost no matter how they start our. For now, so far so good. They re a medium-weight and fullness, I would say. They do a good job of showing off the pillow sham design, so that's a plus. I'm not planning for us to sleep on them, but they are added back support while watching TV. They are primarily for decorative purposes when the bed is made with the quilt and shams. They were a reasonable value for the intended purpose.
