Species Details

The Shovelnose sturgeon (Scaphirhynchus platorynchus) is a unique North American species that can be sustainably wild-harvested. Native to the Mississippi and Missouri River systems, it is well adapted to the dynamic conditions of these waterways. Despite its modest size of 2–3 feet, it matures relatively quickly in 7–10 years, making it ideal for sustainable domestic caviar production. Its resilience and consistent roe quality support both local ecosystems and American aquaculture independence. This combination of environmental sustainability and premium roe quality exemplifies responsible harvesting and gourmet excellence.

Quality Indicators

Appearance of Hackleback Caviar

Hackleback caviar presents small, uniform pearls with a smooth, fine grain and jet black color that highlights its quality. Each pearl is distinct yet cohesive, creating a visually refined presentation. The consistent coloration and elegant luster emphasize the sophisticated appearance expected of top-tier domestic caviar. These visual qualities showcase Hackleback as a luxurious product proudly from America.

Texture of Hackleback Caviar

Hackleback shines with petite, firm pearls that pop lightly on the tongue, releasing bursts of rich, lively flavor. Each tiny pearl carries surprising weight, delivering an engaging mouthfeel that celebrates its wild river origins. The crisp, clean texture balances delicacy with substance as it’s texture embodies the charm, intensity, and refinement of American luxury caviar.

Flavor Profile of Hackleback Caviar

Hackleback caviar offers a bold, buttery flavor with pronounced depth, complemented by subtle nutty undertones that unfold across the palate. Its rich, savory profile reflects the sturgeon’s wild Mississippi River origins, delivering concentrated intensity despite the small pearl size. The flavor evolves from an initial burst to creamy, nuanced layers, demonstrating complexity and sophistication. A clean, mineral finish provides gentle brininess without overwhelming the palate. This caviar exemplifies premium American wild-harvested quality, satisfying both newcomers and seasoned connoisseurs.

Storage and Serving Guide

How to Serve Your Caviar and Roe

Step 1: Proper Storage & Temperature

Keep your caviar and roe refrigerated at 28°F to 32°F until you're ready to serve. Remove from the refrigerator 10-15 minutes before serving to acclimate to the ambient temperature. Caviar and roe should be served chilled but not ice-cold, as extreme cold mutes the delicate flavors.

Step 2: Choose the Right Serving Vessel

Use non-metallic serving spoons to prevent a metallic taste from clashing with your caviar and roe. Mother-of-pearl, bone, or plastic spoons are the best options. Serve in small glass or ceramic bowls nested over crushed ice to maintain a safe temperature. If you don't have serving bowls, you may place the opened caviar tins in a bowl of crushed ice. The tins have food-safe varnish that prevents a metallic taste.

Step 3: Portion Appropriately

Plan for ½-1 ounce per person as an appetizer with other foods so all guests can have "a taste." For a full caviar portion, serve 1 ounce per person. Use a gentle touch when portioning and never press or crush the delicate pearls.

Step 4: Select Complementary Accompaniments

Serve with items that complement without overpowering the mild, nuanced flavors. We recommend:

  • Blinis or toast points (unsalted)
  • Crème fraîche, light sour cream, or clotted cream
  • Champagne, vodka, or crisp white wines

Pro-Tip: Skip the chives, red onions, chopped eggs, and other accompaniments in a traditional caviar service. These traditional accompaniments were introduced when preservation methods required heavily salting the caviar. With today's advanced refrigeration methods, caviar does not need to be over-salted and you can enjoy the caviar's true flavor profiles.

Step 5: Serve and Enjoy Immediately

Present your caviar and roe just before serving. Invite your guests to take small portions and savor slowly on the palate to appreciate complex flavors and texture. Enjoy within 2 hours of opening and never leave at room temperature for extended periods.

Pairings

Hackleback pairs beautifully with bourbon, domestic spirits, and regional wines that enhance its bold, concentrated flavor. Southern-style service highlights traditional Mississippi River presentations with appropriate accompaniments. Classic American serving methods, including blinis and crème fraîche, honor domestic caviar traditions. These practices emphasize the wild-harvested origin and premium quality of Hackleback caviar.

A must have for any Simpsons fan
    Format: Paperback
For those of you who are fans of the hit television show "The Simpsons", you are probably well acquainted with the legendary "Treehouse of Horror" episodes that have become a Halloween tradition. These episodes have proven to be such a seasonal favorite that Groening and the gang have decided to dish out even more tales of terror in "Bart Simpson's Treehouse of Horror: Heebie-Jeebie Hullabaloo". Hullabaloo is a collection of comics and sketches that cleverly capture the humor and style of the Simpsons Halloween specials. Much like the television version, the main stories in Hullabaloo are parodies of famous horror films. The first story in the book is a parody of the classic horror film "The Blob". In the sketch, Simpsons character Sideshow Bob takes an experimental treatment that transforms him into "Sideshow Blob". Seizing the opportunity to take revenge on his nemesis Bart, Sideshow Blob squeezes out of prison and wreaks havoc on Springfield. After Springfield is saved from "Sideshow Blob", they barely have time to recover before Lisa becomes possessed by the evil spirit of Madonna in "The Exorsister", a combo-parody of the infamous "Exorcist" and the even more infamous Madonna. The book continues with additional parodies of films such as "Little Shop of Horrors", "The Invasion of the Body Snatchers", and "Cat People". In between the main features of the book are a plethora of comics, guides, and stories hosted by and featuring an assortment of Springfield characters. One of these guides features everyone's favorite slack-jawed yokel, Cletus Del Roy. Cletus presents to us "A Yokels Guide to Halloween" which teaches us how to celebrate Halloween like "Edgar Allan" Poe white trash. Another extra features Bart's "Guide to Low-Budget Costumes" which shows you how to cheaply transform yourself into horrid monsters such as "Vaselino, The Thing That Wouldn't Dry". You'll also find the story of "Elijah Dunn and the One-Armed Nun", Evil Dr. Burn's "Goodtime Servant Factory", "Springfield in Hell", and much, much more. Hullabaloo is colorful, fun, entertaining, and just in time for Halloween. The comical cast breathes sarcasm and humor into favorite horror classics. If you are a fan of the Simpsons and Halloween, then this book will not disappoint you.
