Yenifer Rojas Trujillo's farm Varietales sits at 1800masl in Gigante, Huila, Colombia. Her continued dedication to quality is evident in every step of the growing process, from the careful monitoring of the soil and intercropping practices with Yucca and Plantain, to the well-managed processing and drying. This extremely clean and intensely floral Bourbon Rosado was fermented for 12 hours underwater in cherry before being depulped and further fermented in water for 48hrs, then washed and dried in traditional patios. This is our first time purchasing from Yenifer Rojas, and our first time working with our newest importing partner, Primavera Coffee. This is one of those truly stellar lots that we will try our hardest to secure year over year as time goes on.
In the cup, we find tons of florals, elderflower, lavender, hibiscus, jasmine and apple blossom to name a few. Sweet and crispy honey notes and a laser focused malic acidity coalesce to remind us of in-season honeycrisp apples. Some subtle berry and bergamot tones begin to show up as the cup cools. Finish is lasting and sweet as those berry and floral notes all linger and dance on the palate.

PERFECT RETRIEVING TOY

You can barely whip it and it sails far and fast. This is the perfect retrieving toy for my GSP. She's used to average and we now have a small yard, so the dog park is where she gets to run hard and fast. You can also throw tennis balls with it, which is a plus for when her sister steals her ball.
