Using traditional French winemaking methods, our wines are crafted using méthode traditionnelle & are aged on lees for several years, enhancing their character and complexity while retaining lively, fresh fruit flavours.
Aromas of lemon brioche and lemon curd, citrus zest and fresh strawberries from the Chardonnay and Pinot Noir fruit.
Extended time on lees during secondary fermentation contribute complex aromas of nougat and walnuts. The palate is balanced with delicate dried fig flavour, fine creamy texture and a refreshing natural acidity. The finish is dry and fresh with lingering flavours of citrus and nougat.
