Aromas of bright lemon citrus, ripe cantaloupe melon, and warm proving dough rise from the glass, offering a nose that is both vivid and inviting. On the palate, it’s medium-bodied with a creamy, silken texture and a generous fruit profile. The finish is long and finely detailed, echoing with pure fruit clarity and a lingering note of digestive biscuit.

A superb companion to seafood, this wine is electric alongside fresh oysters, grilled lobster, or beurre-blanc-dressed white fish. It also pairs beautifully with salty, oil-rich Marcona almonds, delicate slices of prosciutto, and both traditional and bold modern sushi—vegetable dragon rolls, spicy tuna, or unagi maki.

Crafted exclusively from hand-harvested Chardonnay grapes grown in Kent, this Blanc de Blancs is the result of meticulous attention from vineyard to bottle. The grapes underwent gentle pressing, with only the finest cuvée portion retained. Fermentation took place partially in stainless steel to preserve freshness, and partially in French oak barrels to build depth and complexity. Malolactic fermentation was encouraged, with bâtonnage (lees stirring) from the end of alcoholic fermentation through to the completion of MLF, enhancing the wine’s creamy mouthfeel. Following bottling, the wine underwent secondary fermentation in bottle and was aged on lees for five years, developing its refined texture and toasty nuance.
