Six Questions Your Walk-On's Bistreaux & Bar Franchise Financial Model Must Answer

We built this model using detailed research on high-volume sports bar operations to ensure your projections are grounded in reality. Key assumptions like the $60,000 franchise fee, 8% total brand fees, and $2.7 million in total startup costs are pre-loaded but fully editable to match your specific site. With Year 1 revenue starting at $2,263,000, this tool helps you manage the tight margins of a scratch-kitchen operation.

When does the unit turn a profit?

The unit is projected to reach its operating break-even point in April 2026, just four months after launching food sales. While Year 1 EBITDA starts at $642,000, the trajectory climbs significantly to $1.9 million by Year 5 as event packages and beverage sales scale up.

Profitability Drivers

  • Optimize kitchen labor ratios
  • Scale high-margin beverage sales
  • Grow corporate event volume
[dynamic_pic9]

How much capital is required?

Launching this unit in the US requires a heavy initial investment of over $2.7 million, primarily driven by $1.2 million in leasehold improvements and $450,000 in kitchen equipment. You defintely need to plan for a lowest cash point of -$1,278,000 in July 2026 to cover the gap between build-out and full revenue ramp.

Major Capital Uses

  • Leasehold Improvements: $1,200,000
  • Kitchen Equipment: $450,000
  • Outdoor Patio Construction: $350,000
  • AV Suite Installation: $300,000
[dynamic_pic10]

What is the return on investment?

Investors can expect a 5-year payback period with an Internal Rate of Return (IRR) of 2.38% and a Return on Equity (ROE) of 3.8. While the initial cash outlay is substantial, the average net margin improves as annual revenue grows from $2.2 million to $4.5 million over the five-year forecast.

Investment Metrics

  • Internal Rate of Return: 2.38%
  • Payback Period: 5 Years
  • Year 5 EBITDA: $1,909,000
[dynamic_pic11]

Where is the break-even point?

The monthly break-even point is achieved in month 4 of operations, provided you hit the target volume for 'Bistreaux' food sales. The primary driver affecting this timing is the $20,000 monthly rent combined with the 8% royalty and marketing burden, which requires high throughput to offset.

Break-even Levers

  • Increase average guest ticket
  • Manage food waste percentages
  • Control kitchen overtime labor
[dynamic_pic12]

What is the cash runway?

The lowest cash point hits in July 2026, meaning you need at least seven months of runway from the start of construction to survive the ramp-up. We recommend an additional cash buffer to handle potential delays in signage or IT system installation which could push back the full launch.

Cash Protection Plan

  • Phase patio construction costs
  • Negotiate rent abatement periods
  • Manage opening food inventory
[dynamic_pic13]

How do scenarios impact results?

Switching to a High scenario by maximizing 'Power Lunch' and event revenue can pull the payback period forward and significantly increase the 3.8 ROE. The model shows that even a small increase in beverage sales has a massive impact on Year 1 margins because fixed costs like the $75,000 GM salary stay constant.

Hitting High Case

  • Execute local digital marketing
  • Drive repeat fan club traffic
  • Upsell corporate event packages

Very durable and fun to play with
Set name: Stuffed Animal Dog Toy Set (5 Pcs)
I've had them a few weeks now and my dog that destroys other chew toys hasn't made a dent. My smaller dog made 1 his favorite and sleeps with it. Overall, I think it's a good deal.

Gus the goose Buster's new bff
My pitbull terrier loves his goose and has not tore this up but he had not tried either. He's funny with soft toys but loves A good tug of war or actual chew toy.

Fun Goose Dog Toy
I have a small dog with about 20 plush toys to play with. Added to her inventory now is the ILC Buy Interactive Goose Toy for Small Breeds. It took me a while to figure out where the toy "squeaks", and it makes the noise when the white banded neck around the goose is squeezed. My dog took an immediate liking to the toy and loves to carry it around the house, shaking her head back and forth with the goose in her mouth. It appears to be made primarily of burlap (see pictures) and is about 12-13" in length. Fortunately, my dog doesn't destroy toys, as some (probably larger) dogs do, so it appears to be pretty sturdy and well-made. After a week of playing with it regularly, the toy still looks brand new. I like the coloring and the size of the goose, and this is a nice addition to my dog's playtime routine. It is also priced appropriately for a dog toy of its size and quality. Recommended. Made in China.

Durable toy with a single squeaker
This goose seems to be made of fairly durable fabric. It's not flimsy. I had a hard time finding the squeaker in it at first, but then I realized the squeaker is located in the white neck! My medium border collie grabbed it first. Then my pitbull figured out where the squeaker was and ran around squeaking it for a while, which is her favorite thing to do. So this toy did get some interest from the pitbull especially. She isn't one to chew things up but really enjoys toys that make noise. Since the squeaker is in the skinny neck portion, it made it easy for her to grab hold of it and squeak it over and over again. I am giving this 4 stars only because in the whole long body of this toy, the neck has the only squeaker. I think it would have been better and more stimulating for my dogs if it had multiple squeakers or even some crinkles in the rest of the body...at least some crinkles in the flat feet of the duck. The sole attraction is that one squeaker in the neck. So it could be better, but I do like that it isn't super plush and full of stuffing that would be torn up in 5 minutes like most toys. My pitbull actually took this to another room away from her three sisters, so that means she really wanted to play with this by herself. That's a good sign.
