Bei dem überaus wertvollen Saft dieser Trauben wird das für Balsam-Essige typische Einkochen völlig entbehrlich, denn die Konzentration der Geschmacks- und Duftstoffe erfolgte bereits in höchstem Masse auf natürliche Weise an den Rebstöcken. Die Weine stammen ausschliesslich aus der Kollektion des internati- onal ausgezeichneten Winzers Alois Kracher. Er passt vorzüglich zu Meeresfrüchten, zu allerlei Gerichten mit fernöstlichen Akzenten, zu mediterranen Salaten und als edle Würze für dunkle Fonds und Saucen. Der Wein-Essig präsentiert sich heller als Aceto Balsamico, doch sein Aromenspiel ist lebhafter als man es von den meisten Balsam-Essigen kennt.
