Die Sidama-Region im Überblick:

Die Sidama-Region liegt im Süden Äthiopiens, an der Grenze zu Kenia. Sie ist nach der ethnischen Gruppe der Sidima benannt, die im Südwesten Äthiopiens leben. Der Süden des Landes ist ein privilegiertes und exklusives Anbaugebiet für Kaffee.

Die Kaffeebohnen wachsen im Schatten der Bäume und werden sorgfältig von Hand geerntet. Anschließend werden sie nass aufbereitet, wodurch sie eine sehr angenehme Säure erhalten.

Sidama Nyala Moka macht 11 % der Produktion aus. Diese gewaschene Qualität ist sehr begehrt.

Ein kurzer Blick in die Geschichte: Äthiopien, die Wiege des Kaffees, kultiviert ausschließlich die botanische Art Arabica in Höhenlagen zwischen 1.500 und 2.300 Metern über dem Meeresspiegel.

Je höher der Kaffee im Hochland wächst, desto besser ist die organoleptische Qualität der gerösteten Bohne, insbesondere ihr intensives Aroma.

Äthiopischer Kaffee wird „Moka-Kaffee“ genannt, da er einst vom Hafen Mocha im Jemen auf der Arabischen Halbinsel exportiert wurde. Es gibt verschiedene Moka-Sorten.

Mit 400.000 Hektar Anbaufläche spielt Kaffee nach wie vor eine zentrale Rolle in der äthiopischen Wirtschaft, insbesondere im Hinblick auf die Deviseneinnahmen.

Das Land ist der fünftgrößte Produzent und zehntgrößte Exporteur weltweit. 60 % der Produktion werden exportiert, das entspricht 172.000 Tonnen pro Jahr.

Kaffeebäume werden angebaut: im natürlichen Waldschatten (15 %), in halbwüchsigen Gebieten (35 %), in Mischkultur mit anderen Nutzpflanzen (35 %) oder in Intensivplantagen (15 %).

80 % des Kaffees gelten als „natürlich“, da er trocken aufbereitet wird, während die restlichen 20 % gewaschen werden.

Fast alle Produzenten verzichten auf chemische Mittel. Äthiopischer Kaffee könnte bio-zertifiziert werden, das Land hat das Zertifizierungsverfahren jedoch vermutlich aus Kostengründen noch nicht eingeführt.
