Der "Lagrimone" Prosciutto di Parma von Cantarelli ist ein außergewöhnlicher Schinken, der für seine Spitzenqualität und sein feines, zartes Fleisch bekannt ist. Dieses Meisterstück der Schinkenherstellung reift 24 Monate lang in den Bergen bei Parma, genauer gesagt in Lagrimone, auf 700 Metern Höhe über dem Meeresspiegel. Hier profitiert der Schinken von einem besonderen Mikroklima, das zur Perfektionierung seines Aromas und seiner Textur beiträgt.

Für die Herstellung werden ausschließlich ausgewählte Keulen der Edelschweinerassen Large White, Landrace oder Duroc verwendet. Während seiner Reifezeit verliert der Schinken mehr als ein Viertel seines ursprünglichen Gewichts, was seinen Geschmack intensiviert und für ein unvergleichliches Geschmackserlebnis sorgt. Der Schinken wird ohne Knochen angeboten und ist rundgebunden, was nicht nur zur Ästhetik, sondern auch zur Gleichmäßigkeit des Reifeprozesses beiträgt.
