Der Amarone della Valpolicella Classico aus der Collezione Pruviniano ist eine Mischung aus Corvina-, Corvinone- und Rondinella-Trauben von einem Weinberg, der sich auf etwa 200 bis 250 Metern über dem Meeresspiegel im Weiler Prognol im Herzen des Valpolicella Classica in einem Gebiet befindet, das früher als Pruviniano bekannt war. Die 15 Jahre alten Reben sind nach Südosten und Südwesten ausgerichtet und wachsen auf Böden aus Schluff, Ton und Kalkstein. Nach der Ernte werden die Trauben bis Dezember/Januar im Obstkeller getrocknet. Die Weinbereitung umfasst auch eine einmonatige Mazeration auf den Schalen. Der fertige Wein reift etwa anderthalb Jahre in Eichenfässern, bevor er abgefüllt wird. Dieser elegante und gehaltvolle Wein hat eine tief granatrote Farbe. Sein aromatisches Profil ist duftend, komplex und kraftvoll mit Noten von Kirschmarmelade und roten Früchten, getrockneten Feigen und Pflaumen, Backgewürzen, Kakao und Kaffee und einigen balsamischen Anklängen im Hintergrund. Am Gaumen ist er dicht und konzentriert, intensiv und tief mit einem langen, warmen Abgang. Dieser Wein passt wunderbar zu geschmortem rotem Fleisch oder Wild.
